Jason Ellison opened the doors to Chez Jules over 14 years ago. Here he gives a brief synopsis about how the restaurant was created and a few rules he likes to live by.
“When we started out back in 1997, no one in Chester was offering good quality, well priced food in a restaurant with great atmosphere.
Having spent a lot of time in France, I fell in love with the country’s passion and respect for the finer things in life, producing simple, great tasting food using the very best produce regardless of the size or location of the eatery. I was determined to make this work in Chester and 14 years on we continue to have this philosophy at the heart of our restaurant, complete with the fundamental ingredient… a mouth-watering menu using the best produce available, that lives up to expectation time and time again.
Everyone loves to eat out and in the current climate, people’s decisions are far more considered. Where else can you get a two course lunch menu that changes daily, cooked in a fantastic arena at the hand of seasoned professionals, with love and flair for less than £10? We have carried this promise through to our sensibly priced wine selection. The more expensive the wine the less margin we take, ensuring that our customers can enjoy fantastic, bespoke wines and unmatched prices.
It seems that the focus at home and in restaurants these days is all about fresh produce. To us this is just common sense and something that we have been doing from the day we opened. We go out of our way to provide the freshest, in-season produce that makes our menus what they are.
On top of this, our staff are trained in ‘loveliness’ to ensure that every customer leaves totally satisfied with their experience, whether they are coming in for a 2 course lunch or a five course Gastronomique evening. As one of the longest standing restaurants in Chester, our guests who return week in week out speak for themselves.”
